INGREDIENTS

  • ⅓ cup Chicken Stock
  • ¼ cup Diced Yellow Onion
  • 1 clove Minced Garlic
  • ¼ cup Fresh Flat-Leaf Italian Parsley
  • ½ lb. Ground Beef
  • ½ lb. Ground Pork
  • ½ lb. Ground Veal
  • ⅓ cup Plain Breadcrumbs
  • 2 Eggs
  • ¼ cup Parmigiano-Reggiano Cheese
  • 1 tsp Red Pepper Flakes
  • 1 tsp Salt
  • ¼ cup Extra Virgin Olive Oil
  • 4 cups Marinara Sauce

INSTRUCTIONS

  • Using a food processor or blender, purée the chicken stock, onions, garlic, and parsley until they are smooth.
  • Take a big mixing basin and pour the purée into it. Combine the meat, bread crumbs, egg, red pepper flakes, salt, and Parmigiano-Reggiano cheese in a large mixing bowl. Combine them well with your hands, but do not overmix.
  • Grease your hands with olive oil in order to form balls from the mixture that are bigger than the size of golf balls.
  • In a 10-inch-wide pan, heat 12 inches of extra virgin olive oil over medium-high heat until shimmering. Cook the meatballs in the pan until they are browned on both sides, about 10 minutes. Turn them one more to ensure that they are cooked on both sides. This will take around 10-15 minutes.
  • In a large saucepan, bring the marinara sauce to a boil. Transfer the meatballs to the saucepan with the sauce and turn the heat down to low to keep them warm. Cook them for 1 hour at a time.
  • Serve when still heated.
